We’ve been receiving a lot of broad beans and lettuce in our veg box over the summer months – so I thought what better use for them than to combine the two in this colourful and simple stew. When I’ve mentioned to friends that this green dish contains cooked lettuce, I’ve had a mixture of reactions – from surprise to disbelief. However, the proof is in the tasting as the grated lemon zest and fresh thyme combine nicley with the creamily textured lettuce, and the broad beans give it a nice bit of bite!

We made the tofu omelette recipe from the ppk! It took a time but was delicious, and we had it with garlic mayonnaise. We also strew the table with scarves, to give it the required amount of orange.
