Broad beans peas and cooked (yes cooked!) lettuce stew

We’ve been receiving a lot of broad beans and lettuce in our veg box over the summer months – so I thought what better use for them than to combine the two in this colourful and simple stew. When I’ve mentioned to friends that this green dish contains cooked lettuce, I’ve had a mixture of reactions – from surprise to disbelief. However, the proof is in the tasting as the grated lemon zest and fresh thyme combine nicley with the creamily textured lettuce, and the broad beans give it a nice bit of bite!

This is one of my favourite recipes from that culinary adventurer Yotam Ottolenghi. The recipe can be found on his Guardian food blog.

Hard Limes

We’ve just started a blog! It’s called Hard Limes (because once we tried to come up with vegan puns on nineteenth century novel titles). We are two vegan friends from Birmingham, UK who really like cooking, eating, taking photos of and talking about food. Let’s see what happens!
